Day 41: Happy October!!

It is finally the weekend! I have been busy lately babysitting during the week and going to the gym every day (sometimes twice a day). A couple weekends ago I went to Tally to visit all my friends and go to an FSU game. Here are some pictures from that fun weekend:

And last weekend was my childhood neighbor and great friend, Kellea’s wedding!

Sadly, this weekend I have no real exciting plans…just the usual. Watch a bunch of football and go to the gym.

Day 26: Weekend Trip!

This is going to be a fairly short post. I am beyond excited for tomorrow! I am going to Tallahassee for the weekend and I have a feeling that it is going to be a very fun and eventful weekend! I can’t wait to see all my friends and go to the football game on Saturday! Oh how I miss college…I have only been out of college since May, but I sure do miss FSU…especially during football season!

Yesterday I finally made quinoa for the first time. I ended up making a quinoa veggie stir fry and it turned out to be delicious!!!


Today I was absolutely crazy and went to the gym twice and I burned a total of 1,100 calories between the two…I have no idea what has gotten into me. I am becoming obsessed. Crazy I tell ya.

Day 20: I am so confused!

Warning: This is major hodge podge of a post….

Okay…so recently I have become completely obsessive with trying to figure out how many calories I should be eating each day to optimize my weight loss results. So here is my question….how have you gone about losing weight? How did you figure out how many calories you should eat? I know the basics…that there needs to be deficit of 1,000 a day if I want to lose 2 pounds per week. Now where I get confused is do I net my calories? Like say I consume 1,300 calories today, yet I go to the gym and burn 600…would that mean that I only have consumed 700 calories and need to eat more to meet my goal calorie number?? Ugh this is all sooo confusing for me for some reason. It’s driving me crazy! Any help would be much appreciated!!!

On to other things…today I went to Bodypump again with my friend and holy cow was it tough!! I was soooo sore from Wednesday’s class that today’s class was painful!! But geez does it feel good afterwards! Get this….I have now gone to the gym 20 days in a row!!! Ummm wow…I am totally surprised by myself! Never in my wildest dreams would I have thought that I would go that many days straight! Tomorrow i think will be my first day off in like 3 weeks. I am going down to Gainesville all day so unless i want to go at like 6am, it ain’t happening. But I think I deserve this one day off. :)

Yesterday I mentioned that I was going to try a new recipe: lasagna rollups. I made them for dinner last night and my parents loved them. I was very happy that it turned out to be delicious. I’ll share with you the yummy recipe.

Lasagna Rollups (makes 12 rollups)

12 cooked whole wheat lasagna noodles

1 jar of tomato sauce

2-3 cups of 2% shredded mozzarella cheese

2-3 cups of part skim ricotta cheese

parmesan cheese

Preheat the oven to 350 degrees.

Spread a thin layer of tomato sauce along the bottom of a glass baking dish. Then take each noodle and spread some ricotta cheese on each one evenly and sprinkle some mozzarella and parmesan cheese on each one. Then roll up each noodle tightly and place in the baking dish. Then pour some tomato sauce on each rollup and sprinkle the top with some mozzarella cheese and parmesan cheese. Cover with some foil. Bake at 350 degrees for about 20-25. Remove foil cover and bake a little longer until cheese is bubbly.

Also yesterday I got my car windows tinted!! I have been wanting to get it done for awhile now, but i finally had the time and money to get it done! I love the results!!

Day 19: Bodypump

Yesterday my friend and I decided to take the Bodypump class at the gym. I’m not gonna lie we were a bit intimidated to take the class at first. But once we got started, I loved it!


Well today I sure am feeling it! Holy cow am I sore or what!!! I can barely walk! We’re taking the class again tomorrow…hopefully my soreness will not be too bad! I’m thinking that I will start taking that class every Wednesday and Friday morning for strength training!

I think I have found my new favorite thing to eat for lunch. Taco salad. I make it with baked black bean chips, cheese, light sour cream with taco seasoning, salsa, lettuce and other veggies. Sooo yummy!


Also for dinner last night I had a turkey burger with provolone cheese and guacamole on it. Very tasty! And with a side of spicy sweet potato fries.


Today I plan on trying a new recipe tonight…lasagna rollups! I’ll let y’all know how they turn out!

Day 16: I am becoming obsessed.

Obsessed with…

  • going to the gym: I have gone 16 days straight! I think I am addicted already. I basically have to go everyday or I just feel weird. I love going to the gym! (Never thought I’d ever say that! haha) I just really love how I feel during and after the gym…I just feel sooo much better!
  • counting calories: I record EVERYTHING I put into my mouth! I personally love the Lose It! app on my iPhone…it was free and it is sooo easy to track and see your results. Love it.
  • staying on track: It has only been a few weeks but I have become obsessed with not wanting to even think about cheating and to stay on track. I love how things are going and I don’t want to risk messing it up!

I never thought that I could be like this…but I am loving it! I love that this is becoming something I really want to do and that it doesn’t feel like it is something I have to do. I love that I don’t feel like I am struggling to stay on track. I guess something finally “just clicked!” I know it has only been a few weeks, but normally I would have given up by now or gone way off track and gotten discouraged. But this time it is different…I truly believe that I can do this and that I will reach my goals! I think it has also helped that I don’t have all the temptations and distractions around me like I had in Tallahassee at college. Also I think that because I don’t feel like pressure to lose the weight fast (not for a certain reason like to fit in a dress or for a trip, etc.). I feel like I am doing it for the right reasons and not just for a quick fix. I know that it will be a long process and I am totally okay with that. I think that is what “clicked” and why I am feeling at ease about doing it the right way.

Weekend Recap…

I hope everyone had a great long labor day weekend! My weekend consisted of going to the gym, watching a bunch of college football, going to the Gator game (very ugly win), a big family dinner at Carraba’s, and some shopping. Here are a few pictures from the game on Saturday…

Today I went to the gym and ran into a friend that I haven’t seen since high school! It was great! We ended up taking Zumba together! I had never taken an actual Zumba class before. Zumba was a heck of a workout..I was very pleased!

According to my HRM watch I burned 663 calories in that hour! That made me happy! I definitely plan on doing that class again!

Today I was having a major craving for some BBQ…so I convinced my parents to go to Sonny’s for a late lunch. It sure was delicious! I had the smoked turkey lunch with baked beans and a piece of garlic bread. It sure hit the spot and it didn’t throw me off track! Win!! :)

Oh and this morning I made an egg sandwich with egg whites, cheese, and a sandwich thin…I think this may be my new favorite breakfast! Soo yummy!

I am still trying to think of new and great meal ideas….if any of you have any suggestions or favorite recipes you’d like to share (all meals of the day or snacks)…I would love it!!

Day 14: Football and Weigh-In

Today is….

Weigh-In Day! I stepped on the scale and….I was happy with the results! Great way to start the weekend! :)

Also today is GAME DAY!! I am about to hit the road and head on down to Gainesville for the Gator game! Can’t wait! Go Gators!!

Day 12: It’s Officially the Best Time of the Year…

….COLLEGE FOOTBALL SEASON!! I couldn’t be more excited! Nothing better than spending my Thursday night watching nothing but SEC football!

Today was my first day using my new heart rate monitor watch at the gym, and let me tell you…I love it!! I love knowing how many calories I am burning, it makes me more motivated to keep working out! Today’s workout just consisted of the normal intense elliptical workout followed by some moderate weight lifting.

I need to get better at remembering to take pictures of everything I eat. I keep forgetting to take a picture of my breakfast because I am usually still half asleep. But today for lunch I had a Glazed Chicken Lean Cuisine meal with some BBQ Popchips. For a snack I had some crackers with a Laughing Cow cheese wedge. And for dinner I made a shake and bake chicken breast with some roasted asparagus…it was DELICIOUS!!

I am so happy that tomorrow is Friday!! My Labor Day weekend will be spent going to the Gator game Saturday and then watching football all weekend!
